Pumpkin desserts don’t have to be complicated - in fact, my two favorite fall treats start with the simplest shortcut: a box of cake mix.

It’s the secret that saves time, skips extra measuring, and still delivers that from-scratch flavor.

Here’s how I use it in each recipe...

Pumpkin Bars with Cake Mix – Instead of creaming butter and sugar, I just stir pumpkin purée right into a boxed spice cake mix. It’s a perfect match - the pumpkin keeps the bars soft and moist, while the spices are already built in. A quick cream cheese frosting on top makes them bakery-worthy in minutes.
Pumpkin Cheesecake Cookies – For these, I use cake mix as the dry base for the dough, then fold in dried pumpkin purée and warm spices. The dough is thick and bakes up soft, almost like little pumpkin clouds. A swirl of sweet cheesecake filling in the center takes them over the top.

Keep a couple of boxed cake mixes in your pantry year-round. They’re not just for cakes - you can turn them into cookies, cobblers, or bars in a fraction of the time.

My rule of thumb? If you have cake mix, eggs, and butter, dessert is never more than 30 minutes away.
