🍔 Ditch the box! (Plus a poolside snack)

Hi Reader!

Can we talk about how the best summer recipes are the ones that require almost zero effort but still make you look like the most prepared person at the kitchen counter or the backyard party? That's exactly the energy we're going for this week! I've got two brand-new recipes on the blog that are fast, packed with big flavor, and require practically zero cleanup.

First up, I just posted a main dish that completely reinvents a classic childhood comfort food - and it all cooks in one single pan!

Forget the boxed stuff - this Cheeseburger Pasta Skillet delivers all the best elements of a great burger right in pasta form, and it goes from fridge to table in about 30 minutes.

Most recipes out there just throw in some tomato sauce and call it a day, but we are building a true "burger sauce" base using ketchup, mustard, and Worcestershire. It's a total weeknight hero that kids and parents both completely devour!

Boat Dip is a creamy, cheesy, ultra-flavorful cold dip made with cream cheese, Rotel, sour cream, cheddar, and a duo of seasoning packets that is the real secret weapon here. You've probably seen a version of this floating around TikTok - but the original has a texture problem I wasn't willing to live with.

My version uses cream cheese alongside the sour cream, which makes it thick and sturdy enough to actually stay on the chip. No dripping, no soupiness, no sad broken Fritos. Just a dip that holds up.

The best part? You make it the night before, toss it in the cooler, and it's somehow even better by the time you're ready to eat. The flavors have time to bloom together in the fridge, and the whole thing just gets deeper and zestier the longer it sits!

💡 Quick Tip: The Ice Bowl Trick

Serving your dip outdoors? Nestle your serving bowl inside a larger bowl filled with ice. It keeps the dip firm, food-safe, and perfectly scoopable even in the summer heat - and it looks pretty cute on the table too!
