The base is made with a little heavy cream and butter - which keeps it smooth and scoopable instead of seizing up the second it cools. It stays gooey from the first dip all the way to the last one, and that detail makes a bigger difference than you'd expect.

🔥 Broiler Tip

Marshmallows can go from perfectly golden to burnt in less than a minute under the broiler - so don't walk away. Keep the rack a few inches below the heating element and watch it the whole time. Rotate the skillet if one side is browning faster than the other.

The good news? Even if a few get a little extra toasty, they're still delicious!
