🍓 Two new strawberry recipes just dropped - cookies AND cake

Strawberry season is here, and I am fully leaning into it!

Two brand new strawberry recipes just went live on the blog this week - one is a batch of soft, chewy cookies that come together in minutes, and the other is a rich, gooey cake that looks like it took all day. Both start with a box of strawberry cake mix, and both are absolutely worth making this spring!


A box of strawberry cake mix, eggs, and oil (and a few white chocolate chips, if you'd like). That's really it.

The cake mix does all the heavy lifting - built-in flour, sugar, and leavening - so you skip a dozen measuring steps and still get a bakery-style cookie. Stir, scoop, bake for about 10 minutes, and you've got a batch of soft, chewy cookies that stay pink and pretty.

I do have a few tips to share that make a big difference between cookies that spread too flat or turn out cakey versus ones that are thick and chewy. The post covers all of it - including what NOT to do if your dough feels too sticky (hint: please don't add more flour).

💡 Quick Tip

For the best results with any cake mix cookie, skip the greased pan and use parchment paper or a silicone baking mat instead. Cake mix already has plenty of fat - a greased surface is what causes that frustrating spreading.

Also, pull the cookies out when the centers still look slightly underdone. They'll finish setting on the pan and stay soft and chewy as they cool.

Strawberry cake batter gets layered with dollops of sweetened cream cheese, spoonfuls of strawberry pie filling, freeze-dried strawberries, and white chocolate chips - then swirled together and baked into something truly special.
