🧊 Stock the freezer before fall gets busy

Hi Reader!

Summer is winding down, and if you can feel the shift coming - busier schedules, earlier mornings, less time to think about dinner at 5pm - this email is for you. One of the best things you can do right now, before fall hits full swing, is spend an afternoon stocking your freezer. Future you will be incredibly grateful.

This week I'm rounding up some of the best freezer meal resources on the blog - from full boot camp guides to the cozy, hearty dinners that are worth making a double batch of right now.

🧊 Freezer Meal Boot Camp - Where to Start

If you've never done a freezer meal session before, these are the posts to bookmark first. They walk you through the whole process - what to make, how to prep efficiently, and how to set yourself up for weeks of easy dinners.

🍲 Cozy Make-Ahead Dinners Worth Doubling

These are the recipes that make the most sense to batch cook right now. Make one for dinner this week and freeze one for later - you'll be so glad you did when October hits.

A vibrant orange bowl filled with a colorful loaded taco soup next to tortilla chips. Shredded Italian beef or pot roast on a fork close-up, ready to serve.
A hearty bowl of homemade chili topped with sour cream. A spoonful of creamy cheddar bacon chicken dip or soup being lifted from a slow cooker.
  • 7 Can Taco Soup - Seven cans, one pot, almost zero effort. This is one of the easiest soups you can make in big batches and it only gets better after a night in the freezer.
  • Instant Pot Italian Beef - Tender, flavorful, and endlessly versatile. Serve it on hoagie rolls, over rice, or straight from the bowl. It freezes beautifully and reheats like a dream.
  • Instant Pot Turkey Chili - A lighter chili that's still hearty and satisfying. Perfect for the transition from summer to fall when you want something cozy without being too heavy.
  • Crack Chicken Chili - Creamy, bold, and completely addictive. This one always disappears fast, which is exactly why you should make a double batch and freeze half before anyone has a chance to get to it.

πŸ’‘ Freezer Meal Tip

You don't have to commit to a full boot camp to get the benefits of freezer cooking. The simplest version is this: any time you make one of these soups or chilis, just double the recipe. Eat one batch now, freeze one batch in a labeled gallon zip bag laid flat. In a month when you're staring at an empty fridge at 5pm, you'll pull that bag out and feel like you did yourself the biggest favor. Start with one recipe this weekend and build from there.

Fall is one of my favorite seasons for cooking - but it's also one of the busiest. A little prep now goes a long way. Pick one recipe from this list, make a double batch, and get that freezer working for you before September hits!
